Plant description

Extracted by steam distillation from the seeds mature of Cuminum cyminum L. (cumin, cumin), plant herbaceous annual of the Apiaceae native of the Mediterranean oriental and of the Asia central, cultivated from at least 5.000 years as spice fundamental in the cucine of the Middle East, of the India, of the Nordafrica and of the America Latina. The cumin and the spice more citata in the Talmud and in the Vangelo of Matteo. The phytochemical profile is dominated by cuminal (25-45%) — to aldeide aromatic responsible of the odor pungent and characteristic — with gamma-terpinene (25-35%), para-cimene (10-25%) and beta-pinene.
